I have built the complicated thing. TWICE.
For 22 years, I ran operations inside a complex, politically targeted healthcare organization: nineteen health centers, a project office built from zero, and a $130 million P&L.
At the same time, nights and weekends, I co-founded Fathom Bistro in San Diego: the business plan, operating structure, policies, and pricing. I even worked the floor.
Fourteen years later, Fathom is still going. My co-founder runs the day-to-day of what we built together.
